Making Killer Soft Bread (Roti Sobek)

When my parents were here, I attempted to make Killer Soft Bread by Amei that was trending in Instagram's Indonesian baking communities. My first try failed miserably. The bread didn't rise.

Few days ago, I tried to make the same bread with the same recipe because I was really eager to see and taste the famous Killer Soft Bread.

I am happy to say that I finally nailed it and here's the recipe.

Rise and shine, bread!

Killer Soft Bread (Roti Sobek)


260gr Bread Flour
4gr Yeast
1 Egg plus (lukewarm) liquid milk that amount to 160ml-180ml
A dash of Vanilla Extract, optional
30gr Butter, at room temperature
30gr Sugar
2gr Salt

1. As per the general bread maker function: Place milk and egg mixture, sugar and salt first in the bread maker.
2. Pour the bread flour then make a small hole in the flour.
3. Put the yeast in the flour hole (make sure the yeast is not in contact with the liquid ingredients before kneading).
4. Turn your bread machine on (I use the basic program).
5. Once the machine starts kneading and all ingredients now have form dough, put the butter in.
6. Add more flour to the dough if needed. If the dough is too wet, add a bit more flour until the dough is elastic.
7. Let your machine do the rest until the bread is completely baked.
8. If you plan to form a different shape for the bread and bake the bread in the oven, take the dough out from the machine after the 2nd kneading then shape the dough by hands. Let the shaped dough in the tin proof one more time until the dough rises about 80%-90%. 

Ready to go to hot oven.

9. Brush the top of the dough with milk or beaten egg. Bake the dough in a preheated oven at 160-170 degree Celcius for about 20-25 minutes until golden brown.

This bread indeed lives up its name and popularity in social media because the bread is really soft and tender. It is surely a keeper - uses only basic ingredients yet has such a fantastic result.

To celebrate my glory, I sent the above short clip to my husband via Whatsapp. I imagined he would comment, "Wow. Success!""Come I clap for you." Instead, this was what he texted me, "I thought inside got cockroach." Ouch or ouch? This man thought I sent him a forwarded video that shows scary things or random insects people find in their food. #facepalm

Some tips for making this bread:

1. Make sure that egg and butter used are at room temperature.
2. If you brush the top of the dough with milk, the final result of the bread would be like the above - no glossy look. You'd get glossy look if you do egg wash on the bread dough before baking.
3. Don't put too little yeast because it won't make your bread dough rise nicely. However, don't put too much of the yeast either.
4. Make sure you grease the bread tin if you plan to bake the bread in the preheated oven.

    saya mau tanya rahasianya apa sih spy roti bisa berserat panjang dan empuk ala killer soft bread?apa karena pake butter?apa karena suhunya pas?atau apa? thx

    saya sudah mencoba sesuai resep persis cm hasilnya bagian permukaan roti empuk cm saat ditekan terasa ada bagian yg keras spt besi dilapisi spon/tidak menul2.saat dimakan bagian tengah roti empuk tp tidak bisa berserat panjang spt dan bagian luar terasa keras spt besi dilapisi spon/tidak menul2 saya pakai margarin bkn butter.

    1. halo.. mungkin waktu bikin adonan roti belum sampai tahap window pane atau kurang kalis... kalau butter ato margarin saya rasa cuma ngefek di rasanya..
