Baking Zandkoekjes

Back home, I was baking a lot. Almost once every two days. There was this one time that I wanted to bake cookies, just like my younger days. Baking cookies is relatively easy and the chance of success is generally higher than baking cakes. However, it takes more efforts, time and patience since molding the cookie dough really takes time and energy.

I was flipping through my old cookies recipe and decided to pick one that is easy to make, doesn't require too much ingredients and taste good. I chose to bake Zandkoekjes. Zandkoekjes are traditional Dutch cookies, deceptively boring and plain from the look but they taste very good. Their name translates 'sand biscuits' due to their sandy color and crispy texture, almost melt in your mouth.

Zandkoekjes


Ingredients:
  • 250gr Margarine
  • 100gr Icing sugar
  • 250gr Flour
  • 75gr Corn starch / Maizena (heat in a dry wok with small fire until yellowish)
  • 1/2 tsp Baking Powder
  • 2 tbsp Milk Powder
  • 1/4 tsp Vanilla Powder
Tutorial:
  1. Butter the margarine, icing sugar and vanilla powder until creamy and soft.
  2. Add in the corn starch and milk powder. Mix well.
  3. Add in the mixture of flour and baking powder into the dough.
  4. Mold the dough using spuit mold. Alternatively, just roll the dough into logs and cut into slices.
  5. Baked on greased or paper line trays until golden yellowish.
*This recipe creates about 600gr of cookies.

Making the cookie dough was very easy but I really had problems in molding them. I used the stainless spuit molds (usually are sold in traditional markets in Indonesia at a relatively cheap price) but I just could not create pretty cookies on my trays. It was not that easy. In the end, my Mom had to mold all my cookies dough for me. I think, for next time, it's better to wrap the dough in plastic/cling wrap and allow it to rest in the fridge for an hour before start molding the cookies. This way, molding the cookies should be easier to be done.

Anyway, the cookies turned out pretty delicious.
